Masala Puri - Bengaluru style

Anyone from the Indian subcontinent will agree to one thing about food - there is nothing more tantilising and taste-buds satisfying than a spicy, tangy, fresh CHAAT!! Wheather it is a pani puri from the carts or gobi manchurian from a fancy restaurant or good old sev puri made at home, a good Chaat can bring a smile on anyone's face :) 

Every time we visit Bengaluru we make sure we indulge in one of our favourites, MASALA PURI. Being back home sweet home though, it was too tempting not to re-create that Masala Puri magic..so here it is, my version of the very famous Masala Puri, made in a quick and easy way!



Ingredients (for two servings): 1.5 cups of green peas, 1 potato, 1 red onion, 1 tomato, 2 carrots, corriander, few cinnamon sticks, few cloves, salt, chilli powder, chaat powder, 1 spoon tamarind paste, 1 spoon garlic paste, crisp wheat crackers or papdis (Indian wheat biscuits), sev.

Make: In a pan, lightly fry in a spoon of oil, chopped onion and garlic until golden brown. Add cinnamon sticks and cloves and fry lightly. Add the peas and chopped potatoes and 1 carrot chopped with half a glass of water. Add salt and cover. Simmer in low heat for 15 to 20 minutes and you should see the peas and potatoes have cooked well and become very soft. This can also be pressure cooked. Once cooked let it cool a little and transfer all of it except some cooked peas (which is needed later) to a grinder. Grind to a paste then add salt, chilli powder, tamarind paste, chaat masala, the cooked peas from before and mix well.

To assemble Masala Puri, in a plate, make a layer of crispy crackers broken roughly, then pour the masala all over generously. Make a another layer of grated carrot, chopped tomato, chopped onion and few more crackers. Top with corriander and sev. Not only will it look mouth-watering, it will taste amazing with the mix of spicy and tangy flavours!

Goli Baje - Spicy Yogurt Fritters

When it's tea time and you feel like indulging in some deep fried yummies this little snack is both delicious for that afternoon craving and super quick to make. Loved and famous especially in South India for it's crunchy on the outside and fluffy soft on the inside texture, you won't find many folks that don't want this with their afternoon cuppa!

Well, there are many recipes out there but I have found a perfect little one that works great everytime. From batter to fried and ready in 10 minutes!

Here it is, my version of GOLI BAJE (Spicy Yogurt Fritters/Manglore Bajje):

Mangalore bajji


























Ingredients: 1/2 cup self raising flour, 1/2 cup plain flour, 1 tablespoon rice flour, 1/2 cup yogurt (sour is even better), 1 tablespoon chopped fresh ginger, few curry leave chopped finely, few green chillies chopped finely, handful chopped coriander, salt to taste.

Make: In a bowl, take all of the above ingredients and mix well together. Add a bit of water as required to bring the consistency to a thick batter (but not runny). Heat oil in a pan and drop small ball sizes of the batter using a tablespoon. Fry on low flame until golden brown. Ensure low flame so that the inside cooks well while outside is crispy. 
Enjoy hot with chutney/sauce and a warm cup of tea/coffee!

Masala Buns

Who loves the scent of freshly baking bread? Count me in...add to that the scents of spicy masala and you most certainly have a winner in the oven :) That nostalgic feeling of biting into hot baked masala buns is actually so easy to create as I now know.

Quick, easy and so so delicious! Here it is, my version of MASALA BUNS.

 Ingredients: For the bread dough, 2 cups self-raising flour sifted, 3/4 cup of natural yogurt, 2 tablespoons melted butter, pinch of salt, water and olive oil as required. For the masala filling, 2 potatoes boiled and mashed, handful of peas, 1 onion chopped finely, 1 teaspoon cumin and mustard seeds, chilli flakes as required, 1 teaspoon turmeric powder, 1 tablespoon lemon juice, salt to taste, sesame seeds.

Make: Mix the flour, butter, yogurt with water and olive oil to form a firm bread dough. Kneed well and wrap in glad wrap. Leave it covered for at least two hours. Meanwhile, make the potato masala. In a nonstick pan, saute chill flakes in some oil, adding cumin and mustard seeds, turmeric powder and chopped onion. Add in the mashed potato, peas, lemon juice and mix well with salt. Let it cool.
When ready to fill the dough, kneed the dough well again and portion into small palm sized balls. Scoop in 1 tablespoon of the potato masala and fold dough over to close completely. Brush each bun with melted butter then sprinkle sesame seeds. Bake in a pre-heated fan forced oven at 160 deg for about 25 minutes. They are ready when they look golden brown and well rounded. Enjoy the soft, spicy, hot Masala Buns!
