Instant Milk Fudge/Badam Barfi

Foods, especially treats, that are as quick to make as they are to eat, are always a yes! Who wants to spend hours cooking up something that's gobbled in seconds!

Barfi is traditionally a sweet delicacy made with milk and sugar, however in this quick version, we use milk powder and thick cream to get the same taste and texture in just minutes.

Here it is, my version of INSTANT MILK FUDGE/BADAM BARFI:

Ingredients: 1 cup full fat milk powder (or bit more to get texture right), 1/2 cup thick cream (can use low fat cream), 1/2 cup powdered sugar or icing sugar, 2 tbsp badam flavour powder, 2 tbsp almond meal,1 tsp cardamon powder, crushed Pistachio nuts.

Make:

1. In a glass bowl, put in all of the ingredients except nuts and mix together. Place in microwave for 2 minutes.

2. Remove and stir well, put back in microwave for another 2 minutes. It should be bubbling up and changing texture.

3. Remove and stir well, put back in microwave for another 2 minutes. By now it will be leaving the sides when stirred.  If it is too liquid, add a few tablespoons milk powder and repeat process.

4. When the mixture is thick and looks like Kalakand texture, put it all in a lined tray. Pat it flat and sprinkle crushed Pistachio nuts. Let it cool and harden for a few hours before cutting into shape.

Choc Milk Barfi/Fudge

Who has a sweet tooth that comes out from time to time?? Actually who doesn't?! Although not a huge fan of sweets, I have to admit there are times when I enjoy a nice bite of sweetness but love to have less guilt about it. It's great to have fresh homemade treats to munch on too!

The famous Milk Barfi/Doodh Peda/Milk fudge is very well known and I have taken the recipe for that and added my own little twist, to make a gluten free sweet treat that let's you feel a little less guilty.

Here it is, my quick and easy CHOCOLATE MILK BARFI :)

Ingredients: 2 cups full cream milk powder, 1/2 cup ghee/clarified butter, 2/3 cup caster sugar, 1/2 cup fresh milk, 1 tablespoon cocoa powder, 1 teaspoon cardamom powder.

Make: In a wide base non stick pan, add the ghee, milk and sugar and mix well on medium flame. Add in the milk powder bit by bit while stirring continuously to avoid any lumps forming. Finally add the cocoa powder and cardamom powder. Keep stirring for about 6 minutes until the whole mixture leaves the sides of the pan and is a firm dough texture. Line a small try with baking paper and pat the mixture flat. Sprinkle toppings as desired. Let it cool completely, cut into pieces and serve your yummy Choc Milk Barfi!

Doodh Peda (Milk Fudge)

Back to blog after a very long break! Family and travel has seen the little spare time I have being completely taken up, and rightly so :) Unpack and settle back into routines and here it is....festive season is upon us again. Time for more fun and social gatherings, but also time to think of which festive sweets to whip up at home without spending too much time and effort.

Having a little one at home, this sweet treat is one enjoyed in our house not just at festive times - Doodh Peda, my quick version! Here it is :)

Ingredients (for about 15 peda): 1 can sweetened condensed milk, 3 to 4 cups of milk powder, few tablespoons clarified butter/ghee, 1 teaspoon cardamom powder, nuts or sultanas for decoration.

Make: Empty the can of condensed milk into a thick bottom pan and warm on low flame. Gradually mix in the milk powder and continue to mix. Add in the cardamom powder and ghee. Keep stirring on low flame and if too watery, add a little more milk powder.
After about 15 minutes, the mixture should be at the right consistency and will leave the sides of the pan easily. Take off the flame and let cool slightly. Take small amounts into your hands and roll into balls then press to form this shape shown in the picture. Use butter/ghee on your hands if needed. Decorate as desired. Serve after fully cooled.

Enjoy! Happy festivities!
