My Vegetarian Thai Fried Rice!

You know one of those evenings when everything is go go go and you have little time to get a healthy dinner on the table? Yep. 

This simple Thai Fried Rice is perfect and even fun for kids to enjoy with the colourful veggies of your choice!

 













Ingredients: 
1 cup cooked long grain rice, peanut oil, few tablespoons soy sauce, salt, ginger, garlic, chilli, lemon juice, basil, 1 onion, 1 cup vegetables of your choice.

Make: 
Sautee chopped chilli, garlic, ginger and onion in 2 tablespoons of peanut oil.
Add chopped vegetables & a pinch of salt and fry lightly on high flame, adding soy sauce and basil.
Once vegetables are cooked but still crisp, add cooked rice & pinch of lemon juice.
Mix well & enjoy hot!
